If using raw spinach, clean it thoroughly, getting rid of any hard stems, and roughly chop it into large chunks. Place in a big pot with a little liquid over a moderate heat. Once wilted, remove in a strainer for about 15 minutes, then squeeze out any extra water and set aside.

For defrosted spinach, carefully squeeze out unwanted moisture.
